FDA LISTS ENZYMES SAFE TO USE

ROCKVILLE, Md. -- The Food and Drug Administration here affirmed June 26 that certain enzyme preparations commonly used in foods are generally recognized as safe for use as direct food ingredients. The plant and animal enzymes included in this ruling include catalase (bovine liver), animal lipase, pepsin, trypsin, pancreatin (used as a protease), bromelain, ficin and malt.
