The 'Pastry Revolution' Is Here

The course, called "The Pastry Revolution -- the Rustics are Coming," is being held July 20 to 24 at the group's headquarters here.

In addition, the center released its schedule of educational classes for the rest of the year. The classes will cover the fundamentals of bread baking in Spanish, July 27 to 31; and the fundamentals of bread baking in English, Aug. 17 to 21.

The NBC will hold a chocolate pastry seminar from Aug. 24 to 27. A 10-day series on the fundamentals of bread baking will be conducted Sept. 2 to 11; cake doughs, Sept. 14 to 16; layered doughs: Danish, puff pastry and croissants, Oct. 5 to 8; fundamentals of bread baking, Oct. 12 to 16; and creative decorating, Oct. 26 to 28.

Accent Offers Bakery Catalog

PALATINE, Ill. -- Accent Store Fixtures here has introduced a new bakery fixtures catalog that features oak merchandising carts, fixtures and pie towers.

The catalog also lists bin tables, flat tables and mobile tables, as well as oak endcap merchandisers and island merchandisers.

Dawn Caps Knaub's Acquisition

FLOSSMOOR, Ill. -- Dawn Food Products here has completed its acquisition of Knaub's Cakes, York, Pa.

Knaub's manufactures a line of frozen, predecorated cakes for retail, in-store and food-service markets. The purchase of Knaub's will extend Dawn's product line, said a company spokeswoman.

Knaub's former president, R. Scott Knaub; former chief executive officer, Barbara Knaub; and former executive vice president, Vincent K. Wolczek will continue to service new and existing Knaub customers at Dawn. New titles at Dawn for the three executives have not been determined yet.

Dawn intends to expand Knaub's York plant production and freezing capabilities.

Dawn currently supplies a line of bakery mixes, bases, icings, fillings, frozen products and equipment to the food industry nationally.
