In-store coffee, accessibility and demographics all play a role in growing bakeries’ morning sales

Fresh-brewed coffee can give breakfast a lift at supermarkets, but it’s a mix of ingredients that drive morning bakery sales.

Even in-store bakeries that have their own coffee bars, or have contracted with the likes of Peet’s, Caribou or Starbucks, have found that accessibility rivals everything else. Signature product offerings and local demographics also play a factor, retailers said.
