WASHINGTON -- The Food and Drug Administration here last week issued updated regulations regarding fresh eggs.
t or less. Similarly, the agency has mandated a safe-handling statement on cartons of shell eggs that have not been treated to destroy salmonella microorganisms, so that consumers can take measures to protect themselves from illness or death.
According to a document published in the Federal Register, the label must read: "To prevent illness from bacteria: keep eggs refrigerated, cook eggs until yolks are firm, and cook foods containing eggs thoroughly." The rule is due to take effect Sept. 4, 2001.
