DEERFIELD, Ill. -- NutraSweet Co. here has introduced a line of low-fat bakery blends using Simplesse, an all-natural fat substitute.

Simplesse, developed and sold by NutraSweet, is made of microparticulated whey protein concentrate and selected emulsifiers.
The bakery blends can be used to develop baked goods that meet the Nutrition Labeling and Education Act standards for fat-free, low-fat and reduced-fat claims or simply to improve the nutritional profile of a product, the company said.
Currently, Simplesse is being used in a variety of products including bakery items, sour cream, ice cream, sauces and cheeses.
