Publix Finalizes Crispers Sale

LAKELAND, Fla. — Crispers here said Tuesday that a private equity firm has completed the previously announced acquisition of the fast-casual restaurant chain from Publix Super Markets.

Crispers said the private equity firm, Miami-based Boyne Capital, will operate the chain through the newly formed Healthy Food Concepts. Crispers operates 36 restaurants in Florida offering soups, salads and sandwiches.

"Healthy Food Concepts hopes to expand the Crispers offering inside and outside the state of Florida in several test markets over time," the company said in a prepared release.

A spokesman for Crispers told SN the company was considering several possibilities for ways to expand the chain.

Publix, also based here, made an initial investment in Crispers in 2002 and again in 2004, before purchasing it outright in 2007. Crispers said it would continue to offer all Publix employees a 10% discount.
