Looks for products that include kava, Tulsi/holy basil, turmeric, apple cider vinegar, medicinal mushrooms (like reishi and chaga), and adaptogenic herbs (maca and ashwagandha).
Whole Foods calls out producers that have found ways to use byproducts that might otherwise be discarded. Examples include Eco-Olea’s household cleaner line that uses water from its olive oil production as a base, and Sir Kensington’s vegan may made with the leftover liquid from cooking chickpeas.
Coconut flesh now can be found as an ingredient in flours, tortillas, chips, ice creams, butters and more, while the sap is being turned into coconut sugar, an alternative sweetener. In addition, coconut oil is on the rise in the beauty aisle.
Whole Foods predicts a rise in Japanese condiments — such as ponzu, miso, mirin, sesame oil and plum vinegar — as well as seaweed products, Japanese-style pickles and savory breakfast bowls.
