MANHATTAN, Kan. -- Gourmet bread production will be one of the concentrations included in the American Institute of Baking's course and seminar schedule, which has been set through the end of its 1997 calendar.

Also planned are classes in technology of bakery production, July 21 to 25; advanced bakery production, July 28 to Aug. 1; batter and breading technology, Aug. 4 to 6, in Sandusky, Ohio; applied baking science, August 4 to 8; practical pizza production, Aug. 11 to 14; bread baking basics, Aug. 11 to 28; and bagels, Aug. 19 to 21.
